You can have it warm or chilled. I prefer to have it in both ways. First, I have it warm and then I store leftover kheer in the fridge. And have it chilled later.

You can make seviyan kheer (vermicelli kheer) also. It also tastes delicious.

Rice Kheer Ingredients

Very few ingredients are required for making rice kheer. All the ingredients are available at home every time.

Basmati rice: I recommend good quality basmati rice for kheer.

Milk: Always use full cream milk for creamy, rich texture.

Sugar: Sugar required as per taste.

Dry fruits: Cardamom (elaichi), pistachio (pista), raisins (kishmish), almonds (badam) etc. required.

Rice Kheer Recipe | How to make rice kheer

Rice kheer is very popular sweet dish in India. This is made with rice, milk, sugar, dry fruits etc. It is easy to make and every one loves it.

Ingredients

  • 1 liter milk
  • ½ bow rice
  • 1 bowl sugar
  • Elaichi powder
  • badam
  • pista
  • raisins

Instructions 

  • boil the milk on gas and simmer the gas.
  • Add rice in the milk and mix it well.
  • Wait for 5-10 minutes and add cardamom powder and dry fruits in it. And mix it well.
  • Now stir it well every after 2-3 minutes.
  • Onec the milk is reduced to half then add sugar in it.
  • Turn off the gas after 3-4 minutes.
  • Cover it with plate and wait for 5-7 minutes.
  • Rice kheer is ready, garnish it with dry fruits and serve it.

Notes

Tips for adding flavour

  1. You can add a few strings of saffron.
  2. You may add rose water to increase the flavour.
  3. You can add chironji to add a nutty flavour to it.

FAQ

How do you thicken kheer?

I simply thicken the milk in the half to make thick kheer. Or you can add condensed milk to it. I prefer thickening the milk instead of condensed milk.

Which type of rice is good for kheer?

Basmati rice is good for the kheer. But, you can use any type of rice in kheer. I prefer basmati rice.

Should I soak rice overnight?

There is no need for soaking rice overnight. If you are not soaking rice then put rice in milk after one boil. It will cook within a few minutes.

What do we say kheer in English?

Rice pudding is the English name of rice kheer.

How long does kheer last in fridge?

You can store kheer in the fridge for 1 or 2 days. But I consume kheer within 1 day. It is not advisable to store milk products for more than 2 days in the fridge.

Does kheer thicken in fridge?

Yes, if you store kheer in the fridge it will continue to thicken.

What causes the thickening of rice kheer?

If you put too much rice or reduced too much milk then the kheer thickens. If your rice kheer thickens, you can add more milk to make the right consistency.

Are rice pudding and rice kheer the same?

Yes, both of them are the same. In India, we call it rice kheer. Whereas outside India they call it rice pudding All the ingredients are the same in the dish.
