Aam ki Launji Recipe

It is a sweet and spicy side dish made with raw mangoes, jaggery and spices. This is the traditional recipe which tastes delicious.

Ingredients

  • ½ kg raw mango kaccha aam/ambi
  • 3 tablespoon cooking oil
  • 2 tablespoon roughly crushed fennel seed souf
  • 3 dry red chillies
  • 50 gm jaggery gur
  • 2 teaspoon fenugreek seed methi dana
  • ½ teaspoon red chilli powder
  • salt as per taste
  • 1 teaspoon garam masala
  • ½ teaspoon black salt Kala namak
  • ½ teaspoon turmeric powder haldi powder

Instructions

  • Heat the pan on the gas. Once it is hot add oil to it.
  • Now add 2 teaspoon fenugreek seed (methi dana) and whole red chillies.

  • Mix it well
  • Now add fennel seed (sauf powder) in it and mix it well

  • Add ½ teaspoon turmeric powder (haldi powder)

  • Add raw mango and mix it well.

  • Add ½ teaspoon red chilli powder, 1 teaspoon garam masala

  • Add ½ teaspoon black salt(kala namak) and salt as per taste.

  • Add ½ glass of water and mix it well.

  • check after 2-3 minutes, if mango is soft then add jaggery to it

  • Add ½ glass of water and mix it well.

  • Cover the lid again and on medium flame cook it.
  • After 2-3 minutes remove the lid
  • The gravy is thick now. Lower the flame of gas and cook for another 2-3 minutes.

  • Turn off the gas, Aam ki launji is ready.
  • Once it cools down and thickens even more then it will look like the photo that i shared above.

Notes

Important Tip:

Launji thickens more after cooling down, so add the water according. Once it will be a little thick then you will enjoy its taste more.

Variations:

  • You can use sugar in place of jaggery. The taste will change.
  • You can use desi ghee in place of oil to make launji. It will give a nice taste to the dish.
