Heat the pan on the gas. Once it is hot add oil to it.
Now add 2 teaspoon fenugreek seed (methi dana) and whole red chillies.
Mix it well
Now add fennel seed (sauf powder) in it and mix it well
Add ½ teaspoon turmeric powder (haldi powder)
Add raw mango and mix it well.
Add ½ teaspoon red chilli powder, 1 teaspoon garam masala
Add ½ teaspoon black salt(kala namak) and salt as per taste.
Add ½ glass of water and mix it well.
cover the lid
check after 2-3 minutes, if mango is soft then add jaggery to it
Add ½ glass of water and mix it well.
Cover the lid again and on medium flame cook it.
After 2-3 minutes remove the lid
The gravy is thick now. Lower the flame of gas and cook for another 2-3 minutes.
Turn off the gas, Aam ki launji is ready.
